【Stewed pork belly with potatoes and beans】


【Ingredients Required】

Pork belly, beans, potatoes, green onions, ginger, garlic, dried chilies, light soy sauce, dark soy sauce, cooking wine, Sichuan peppercorns, star anise, bay leaves, salt, etc.


【Cooking method】

The first step is to wash the vegetables and cut them into pieces for later use, cut the pork belly into small cubes (the meat at the tip of the back buttocks I chose can also be slightly fattened), and then cut the green onions, ginger and garlic for later use.



The second step is to heat the pot, pour a little cooking oil, put the cut meat in the pot, and stir-fry over low heat until the edge is browned and colored.



The third step, after the meat is stir-fried, there will be some oil, if you don't want to be too greasy, you can scoop out some oil, and then put in green onions, ginger, garlic, dried chili, 1 star anise, 5-6 peppercorns, and 2-3 bay leaves to stir-fry together. Don't put too much peppercorns, just remove the smell and increase the flavor.


Step 4: Be sure to slowly stir-fry the ingredients and the aroma of green onions, ginger and garlic over low heat, then add light soy sauce, cooking wine and a little dark soy sauce and stir-fry.



Step 5: Add an appropriate amount of hot water, the amount of water should exceed the meat pieces, bring to a boil over high heat and turn to low heat, cover the pot and simmer for 30-40 minutes.


Step 5: After the meat is simmered, add the chopped potato pieces, bean segments and an appropriate amount of salt, and continue to simmer for 15-20 minutes.



Step 6: Wait until the potatoes and beans are stewed, taste the saltiness and then you can get out of the pot.

【Cooking Tips】

Add plenty of hot water to the stew at a time, try not to refill it halfway, and if the soup is dry halfway, continue to heat the water, and never add cold water, which will affect the taste and texture. Potatoes absorb some of the soup when they are stewed. In addition, there should be some soup in the pot at the end of the stew, so remember not to dry it too much.
