How to make it:

Step 1: Peel the pumpkin, rub it into thin strips, add a spoonful of salt and marinate for 15 minutes to marinate the water.



Step 2: Prepare a piece of gauze, wrap the pickled pumpkin shreds, squeeze it vigorously, and squeeze out the pumpkin juice for later use.


Step 3: Prepare 400 grams of flour, add 4 grams of yeast powder, a teaspoon of sugar, then pour in the squeezed pumpkin juice, stir into a flocculent, and finally knead the dough into a basin, cover it with plastic wrap and let it rise for 40 minutes.

Step 5: Chop the pumpkin shredded with water, put it in a large bowl, add 2 tablespoons of cooking oil, 1 tablespoon of light soy sauce, 1 tablespoon of sesame oil, a spoonful of pepper, then pour in the scrambled eggs and shrimp skin, sprinkle with chives and stir well to make a filling.




Step 6: Roll out the proofed dough into a large dough with a thickness of 0.5 cm, spread the adjusted filling evenly on top of the dough, then roll up the dough (try to roll it firmly), and then cut the rolled dough into even small pieces.




Step 7: Preheat the electric baking pan, brush with a layer of oil, put the cut pumpkin rolls into the electric baking pan, fry on medium heat until the bottom of the pumpkin rolls is slightly browned, then pour in an appropriate amount of water (the water is not more than 1/3 of the pumpkin rolls), continue to fry until the water is dry, and the fragrant pumpkin rolls are ready.




Tips:

1. Be sure to use squeezed pumpkin juice and noodles, as the pumpkin rolls will have a stronger flavor

2. The oil temperature should not be too high when scrambling eggs, and the eggs scrambled at medium and low temperature are more tender

3. Keep the temperature of the electric baking pan on medium heat when frying the pumpkin rolls to prevent frying, add water and fry it a second time after frying, so as to prevent it from sticking to the pan
