Dried radish with red oil

[Ingredients] 10 kg of radish, 2 handfuls of red pepper, 1 bowl of salt, 5 tablespoons of sugar, 2 tablespoons of white sesame seeds, 1 handful of Sichuan pepper, 3 green onions

1. Prepare the radish, which can be dry radish, white radish or green radish, and if the population is a little larger, you can put more radish. Wash the red pepper and let it dry in the sun to make a red pepper, and the salt is best to use the coarse salt of pickled vegetables.

2. Cut off the head and tail of the washed radish.

3. Then cut the radish into short thick strips, not too thin, it is almost as thick as a finger.

4. Put the radish strips into a large vat, sprinkle a layer of salt and sugar on each layer of radish, marinate for half a day, then bring disposable gloves, knead the radish, and then continue to marinate for half a day.

5. Pickle so slightly soft, take out the radish and put it on the plaque, pay attention to the salt brine of the pickled radish in the jar do not pour out, and use it later.

6. The radish stall is open and dried in the sun for about 4 hours, until it is half dry and half soft.

7. Put the dried radish into the jar, mix with brine, and soak for half a day.

8. Prepare 2 bowls of oil, add green onions and peppercorns to fry until fragrant, remove and discard, leaving pepper and scallion oil. Add green onions and peppercorns to increase the aroma of the oil.

9. Chop the dried red pepper or break it in a food processor, put it in a large bowl with white sesame seeds, pour hot scallion oil, and mix evenly.

10. Pour the red oil and chili seeds into the dried radish and mix them, marinate them overnight and serve.
