Today I would like to share with you a local specialty snack in Shanxi, honey gourd, golden and attractive in color, sweet and crispy, nutritious and delicious
1. Pour 400g of all-purpose flour into the basin, and then pour about 80g of hot oil into the basin. Stir quickly with chopsticks, and when your hands are not hot, rub them together with both hands to fully integrate the flour and oil.
Knead the flour evenly, then add freshly boiled water to the basin and stir in batches. Stir with chopsticks while pouring water.
I have a total of 400g of flour here, add a total of 900ml of boiling water, and stir it all the way (as shown in the picture below).
Then beat several eggs into the basin in batches, and use the rolling pin to stir in the same direction to let the eggs dissolve the dough into a paste.
Don't add eggs all at once, add them in 2 times. Stir the eggs and flour together until you reach this point. I have 400g of flour here, and a total of 10 eggs have been added.
2. Come down and prepare to fry in the oil pan, prepare a small spoon to dip in the oil, so that it can prevent sticking.
Heat the oil to 6 and turn to medium heat. Squeeze it with a tiger's mouth, then scoop a spoonful with a spoon and fry it in an oil pan.
As soon as you put it in the oil pan, it will bulge. After it is bulging, it is all hollow inside, and the shape is round, like a gourd.
Stir back and forth with a colander so that they are evenly heated up and down. Fry until golden brown, remove the oil.
After all the frying is done, increase the oil temperature again, and then pour the fried one back into the pan for a second re-frying. This will make the texture more crispy and less greasy. Fry for about 20 seconds, turn off the heat and remove from the pan.
3. Leave a small spoonful of oil in the pot, add sugar, add a small amount of water, and add some honey.
Stir the sugar over low heat and bring to a boil. Do not float and stir more halfway to prevent the sand from turning.
Boil until the soup thickens in the pot and turn off the heat.
Then pour the gourd you just fried into it, and quickly stir it evenly. Sprinkle white sesame seeds on top of the plate and serve.
