Homemade braised duck
Ingredients: half a duck, a pot of old braised soup, a small piece of cinnamon, a star anise, two bay leaves, two spoons of light soy sauce, a spoonful of dark soy sauce, two spoons of oyster sauce, a spoonful of pepper, a spoonful of salt, a little peppercorns, an appropriate amount of liquor, a large piece of ginger, two small pieces of rock sugar, four dried chili peppers, a little chives, a little cooking oil.
Method:
1. Tear off the subcutaneous lymph of the duck's neck, cut off the duck's buttocks, and clean it.
2. Cinnamon, star anise, bay leaves wash and control the water, peel the old ginger and wash it and pat it flat.
3. Wash the chives and cut them into chopped green onions.
4. Heat the pot and add cinnamon, star anise, bay leaves, dried chilies, ginger and peppercorns to stir-fry until fragrant, put them in the old marinated soup and cook together for three minutes.
5. Add salt, light soy sauce, oyster sauce, dark soy sauce and rock sugar and continue to boil.
6. Put the duck, pepper and liquor together in the marinated pot, after boiling on high heat, change to low heat and simmer for 15 minutes, turn off the heat and let the duck soak in the marinated soup for two hours (soaking for a long time can make the duck meat more flavorful).
7. Before eating, turn on the heat and boil, take it out and let it cool slightly, cut it into pieces, put it on a plate, sprinkle it with chopped green onions, and pour in a little braised soup.
Minced meat and winter melon
Ingredients: 500 grams of winter melon, 150 grams of hind leg pork, a little minced garlic, a little minced ginger, a little chopped green onion, half a spoon of oyster sauce, half a spoon of salt, appropriate amount of cooking oil.
Method:
1. Peel the winter melon, remove the seeds, wash and cut into thin slices.
2. Wash the pork and cut it into minced meat.
3. Heat the pot and add oil, put the minced garlic in the pot and stir-fry until fragrant, pour in the winter melon pieces and stir-fry for two minutes, add a little water, cover the pot and simmer for two minutes, add salt and fry to bring out the bottom taste, turn off the heat and put it on a plate.
4. Heat the pan and add oil, add minced garlic and ginger to stir until fragrant, put minced meat and fry until it changes color, add a little salt and oyster sauce and fry evenly, add a little water to simmer, put in chopped green onions and fry evenly out of the pot on top of the fried winter melon slices.
Spicy fish larvae
Ingredients: 250 grams of small fish, two spoons of chili powder, half a spoon of cooking wine, one spoon of pepper, an appropriate amount of shredded ginger, half a spoon of salt, and an appropriate amount of cooking oil.
Method:
1. Clean and drain the small fish, add cooking wine, pepper and salt, mix well and marinate for 20 minutes.
2. Heat the pot and add oil, evenly fry the small fish until golden brown on both sides.
3. Add shredded ginger and chili powder and stir-fry evenly, add a little water and simmer for one minute.
