If you can eat spicy food at home, use a few more dried chili peppers.
Method:
1. A box or a large piece of northern tofu or brine tofu, cut into small pieces. It is not recommended to use lactone soft tofu here, because it will have to be fried later, and the soft tofu is too soft.
2. Put a little more oil in the pan, put in the tofu and fry it slowly over low heat, do not turn it so as not to break. We see that the bottom is golden brown and then all the side is turned over and fried on the other side.
3. Fry the tofu on both sides until golden brown, in this process, I just moved it when I turned it, remember not to turn it back and forth, it will crumble to the point that there is no shape. Pour out the oil from the fried tofu and leave a little base oil.
4. Chop the white part of the green onion left over from yesterday's scallion oil noodles, you can also use segments, put it in the pot for a little oil, and then put it in the pot, put water to cover the tofu and cook over medium heat. For friends who like spicy food, you can add a few dried red peppers to taste at this time.
5. Add oyster sauce, dark soy sauce, light soy sauce, salt, chicken essence, sugar to taste, boil until half of the water remains, add a little water starch. Water starch is just a tablespoon of cornstarch mixed with a little water. Drain the juice and serve.
