Start making

Step 1: After preparing the ingredients, start to make the oil skin, put all the materials of the oil skin part into a basin and mix well, and then knead well to knead the glove film. Authentic wife cake is added lard, lard is easier to get out of the glove film, and the taste is softer, but the oil flavor of lard is unacceptable to many people, so you can use the same amount of butter or tasteless cooking oil (such as corn oil, sunflower oil, olive oil, etc.) to replace. After the dough is kneaded, cover with plastic wrap and let loose for 30 minutes. Be sure to soften the butter at room temperature before using it.


Step 2: Next, make the puff pastry, put the cake flour and butter into a basin, press and mix with a spatula, then cover with plastic wrap and put in the refrigerator. It is recommended not to mix the dough with your hands, because the temperature of the hands is relatively high, and it is easy to melt the butter.


Step 3: After the oily dough is relaxed, knead it into long strips and divide it into 20 agents of equal size, each agent is about 23 grams, knead the round cover with plastic wrap for later use, and then divide the puff pastry into 20 agents of equal size, each agent is about 17 grams, take an oily skin agent and press it into a dough by hand, and then take a shortbread to wrap it, and push the dough up with the tiger's mouth part when wrapping, and finally place it with the mouth facing downIt should be noted that during the production process, the finished agent should be covered with plastic wrap throughout the process.


Step 4: After all the ingredients are wrapped, cover with plastic wrap and relax for 15 minutes.
