This kind of small seafood is the cheapest, and it is used with leeks to stir-fry simply, and it is nutritious and umami

Home-cooked dish [fried leeks with clams] is delicious and easy to make, with enough nutrition and umami

Ingredients Required:

600 grams of clams, 100 grams of leeks, garlic, ginger, light soy sauce, cooking wine, vegetable oil.

Here's how:

The first step, the clams spit out the sand in advance, after the water in the pot is boiled, put ginger and clams, and then pour some cooking wine, and boil until the clams just open their mouths, you can turn off the fire and fish them out.

The second step is to separate the clam meat from the shell when the clam is not hot, and then rinse the clam meat with clean water to remove the sediment.

Step 3: Wash and cut the leeks into sections, cut the garlic and ginger into shreds/slices, pour a little cooking oil into the pot, and stir-fry the shredded chives and ginger.

Step 4: Pour in the clam meat and stir-fry quickly over high heat, stir-fry the water in the pan and release the soy sauce to continue stir-frying.

Step 5: Pour in the pre-cut leeks and fry until the leeks change color and break off. The amount of salt in this dish must be tasted before putting it in. The clams have their own salty taste, so I didn't add salt after putting the sauce, and the taste was just right if it wasn't salty or light.

Cooking Tips:

1. When blanching the clams, you can turn off the heat as soon as you open the mouth, and the clam meat is easy to cook for a long time.

2. It is recommended that the heat of this dish be slightly higher, and the fried meat and vegetables will taste tender and delicious.

3. The peeled clam meat should be rinsed again to remove the sediment.

4. For friends who like spicy food, put some millet spicy when stir-frying ginger and garlic.
