1. First make the filling part, wash the pickles and cut them into dices, and then squeeze out the water vigorously, otherwise the filling will be too wet, and then cut the dried seeds, fatty meat, and lean meat into dices, cut the dried chili peppers into chili rings, and peel the ginger and cut it into small dices.


2. Pour an appropriate amount of rapeseed oil into the pot, and the stir-fried filling must use rapeseed oil, so that the fried filling is fragrant enough, and then put the fat meat in the pot first, boil it on high heat, and boil out the fat oil


3. After the fatty meat is boiled to some dry yellow, we pour in lean meat, dried seeds, dried chili peppers and ginger, stir-fry over high heat, and fry the ingredients until fragrant. You don't have to worry that the fat here will be very greasy, because the fat has been forced out when making it, so the filling will not feel greasy and greasy, and the fat meat boiled to dry yellow is very fragrant, and the filling used to make pickled vegetables has the effect of increasing flavor, so it must be indispensable.


4. Then add 6 tablespoons of light soy sauce, 2 tablespoons of half-aged soy sauce, 6g of salt and 3 tablespoons of chili oil, stir-fry well. The spoon used here is the same spoon that we usually eat


5. Pour in the pickles and stir-fry them with a spatula for at least 3 minutes to bring out the salty aroma of the pickles

8. After frying for about 2 minutes, we pour boiling water, boiling water should be added in small quantities many times, as long as it is stirred to the point that the dry powder can not be seen, the amount of boiling water here I did not write, because the powder ground by different rice species, the water absorption rate is different, mainly depends on the state, when the novice first makes, the boiling water should be added slowly and in small amounts, stir with a shovel until the dry powder is not visible, you can stop adding water, if you accidentally add more than your hands trembling, it doesn't matter, add some rice noodles to come in and synthesize.


9. Pour the scalded rice noodles on the kneading panel, wear disposable gloves and knead while hot, until the surface is smooth, if you feel too hot when kneading, you can pat your hand with some cold water to knead


10. From the kneaded large dough, pull a small dough down, the size is arbitrary, then kneaded into a bowl, and then put an appropriate amount of filling, wrap it, and press it flat after wrapping


11. After all the fillings are wrapped, they should be stored in the freezer, but each layer should be separated by plastic wrap to avoid sticking together
