 Loofah, seafood, mushroom and egg soup

【Ingredients preparation】Eggs, seafood mushrooms, loofah, dried shrimp, salt, white pepper

【Steps】

Step 1: Go to the market to buy fresh loofah, you can hold a piece of loofah when you choose it and shake it gently, the softer is the tender loofah, if the surface is very hard, it means that the loofah is old, and the moisture inside is not enough. After washing the loofah, peel off the skin and cut it into hob pieces for later use.

Step 2: Beat two eggs and set aside.

Step 3: Pour the bottom oil into the bottom of the pot, add chopped green onions and stir-fry the green onion fragrance, and then add the sea rice to also fry the fragrance.

Step 4: Pour the beaten eggs into the pan and stir-fry them with a spatula when the eggs are almost set.

Step 5: Add the loofah cubes and stir-fry, then add the seafood mushrooms.

Step 6: Add warm water to cover all the ingredients, then heat over medium-high heat until boiling, cook until the seafood mushrooms are soft, then turn off the heat, and finally add salt and a small amount of white pepper, and you can remove from the pan.

1. When choosing loofahs, you should choose soft and tender ones, so that there is more water and the taste is more tender.

2. Put all the ingredients in the oil pan and stir-fry, so that the soup tastes more delicious and fragrant. Moreover, the fried loofah soup is green in color and is not easy to cook.
