 Beer Chicken  Stew

Ingredients: 1 large chicken thigh, 2 potatoes (medium), 1 green pepper, appropriate amount of carrots, 2 dried chili peppers, half a shallot, 1.5 tablespoons of bean paste, 1 hall of beer, 3 cloves of garlic, appropriate amount of ginger, more than a dozen Sichuan peppercorns, 1 star anise, 2 tablespoons of Yipinxian soy sauce, 0.5 tablespoons of dark soy sauce, appropriate amount of salt, appropriate amount of cooking wine


1. We prepare the ingredients we need first, 1 large chicken thigh, you can also use chicken wings or whole chicken; 2 medium-sized potatoes are fine, my potatoes are relatively small, I prepared 4; Green peppers can be added according to your preference; carrots to taste; Then prepare 2 dried chilies, half a shallot, 1.5 tablespoons of bean paste, 1 hall of beer, 3 cloves of garlic, appropriate amount of ginger, more than a dozen peppercorns, 1 star anise, and other seasonings, as shown in the picture above.


2. Then we cut the chicken thighs into small pieces, or we can ask the store to help cut them when we buy the chicken thighs; Potatoes, carrots, green peppers, and shallots are cut into pieces, dried chili peppers are soaked in warm water to wash off dust, garlic is partially sliced, part is minced, and ginger is cut into slices, as shown in the picture above.


3. When the water in the pot is boiling, put in the chicken thighs, then add an appropriate amount of cooking wine, ginger slices and peppercorns to remove the smell, and blanch for about 1 minute, as shown in the picture above.


4. In another pot, add a little base oil, first add dried chili, Sichuan pepper and star anise and stir-fry until fragrant, as shown in the picture above.

6. Then put in the blanched chicken pieces, then pour in cooking wine and stir-fry over high heat, as shown in the picture above.

8. Then add the potato and carrot cubes, add the fresh soy sauce, dark soy sauce and an appropriate amount of salt, as shown in the picture above.


9. Then pour in the beer, the amount of beer should be submerged over the chicken pieces, continue to boil over high heat and then turn to low heat and simmer, as shown in the picture above.


10. When half of the soup is left in the pot, add the shallots and stir-fry until slightly transparent, as shown in the picture above.


11. Add green pepper and minced garlic and stir-fry evenly, simmer until the remaining soup in the pot reaches the amount you want, then turn off the heat and serve, as shown in the picture above.

Tips:

1. I like to mix rice with soup, and you can add an appropriate amount of water after adding a hall of beer.

2. If you don't like to eat chili peppers, you can leave them alone.
