Beef brisket soup with tomatoes

Ingredients: 500 grams of beef brisket, 2~3 tomatoes, 1 potato, 1/3 carrot, 2 coriander, 2 shallots, appropriate amount of ginger, appropriate amount of cooking wine, 2 tablespoons of fresh soy sauce, a little pepper, an appropriate amount of salt, 0.5 tablespoons of oyster sauce, a little sugar, 1 package (1 star anise, 10 Sichuan peppercorns, 1 bay leaf, 1 cinnamon, 2 dried hawthorns), appropriate amount of water starch


1. Cut the brisket into small pieces and soak it in cold water for a while to soak in the blood water 


2. Add an appropriate amount of water to the pot, put the brisket in a pot under cold water, put in an appropriate amount of cooking wine, ginger slices and shallots and blanch for about 3 minutes, during which the foam should be skimmed, and then rinse the brisket with warm water and drain it for later use 


3. Then put the brisket into the pot, add an appropriate amount of warm water, then put in the bag (it is best to wrap various spices with gauze or a material box), add shallots and ginger slices and simmer for 20~30 minutes 


4. Then make preparations, wash the tomatoes and scald them with boiling water, tear off the skin and cut them into small pieces, peel the potatoes and cut them into cubes; Carrots are also diced; Finely chop the ginger and set aside 


5. Add a little base oil to the pot, add minced ginger and stir-fry until fragrant 


6. Add diced potatoes and carrots and stir-fry until fragrant and set aside (the potatoes taste particularly good in this way) 


7. Then put the tomatoes in the pot and stir-fry the sand, this step is very important 


8. Then pour in the beef brisket and the soup from which the beef brisket is boiled, turn to high heat and bring to a boil 


9. After the soup in the pot boils, add diced potatoes and carrots, turn to medium-low heat and simmer slowly


10. Boil the soup and tomatoes in the pot until they are fused, and the diced potatoes are also cooked and boiled thoroughly and start seasoning, then add 2 tablespoons of fresh soy sauce, a pinch of pepper, an appropriate amount of salt, 0.5 tablespoons of oyster sauce, and a little sugar and stir well 


12. Finally, add an appropriate amount of water starch and stir well to make the soup thicker and more mellow, and sprinkle chopped coriander before leaving the pot


 Such a thick tomato and beef brisket soup warms the heart and stomach, the beef is soft and tender, and the soup is delicious and rich, which is really appetizing and delicious 


Tips:

1. I added carrots because I prefer to let my children absorb more of the nutrients of carrots, and I can choose to ignore those who don't like them.

2. Tomatoes are recommended to choose tomatoes that are red and soft, and the soup made by eating them raw will taste better.
