Steps:
1. 2. Because vermicelli is a dry product, first of all, soak the vermicelli, prepare a larger basin, and then spread the vermicelli in it, then pour some boiling water into it, the water should not pass the vermicelli, the vermicelli will be scalded until it becomes soft, then add some cold water, soak the vermicelli with warm water, soak it for about 1 hour, soak the vermicelli until there is no hard heart, become transparent, the vermicelli should be fully soaked well, absorb enough water, if the vermicelli is not fully soaked well, it is easy to stick into a ball when firing. Don't keep soaking in boiling water, if the vermicelli is soft, use warm water instead, and soak it in boiling water all the time, and the vermicelli will be easy to break.
3. Wash the celery, cut into inch pieces and set aside. If the celery is thicker, you need to cut the celery into two with a knife first, and then cut it into segments.
4. Shred the pork, chop the green onion, shred the ginger, and slice the garlic.

7. Add the celery and stir-fry together, stir-fry the celery until the color turns dark green, pour in 1 tablespoon of light soy sauce, half a tablespoon of cooking wine, and stir-fry evenly.
