Add 5 grams of sugar, 3 grams of yeast, 150 ml of warm water to 1,300 grams of flour, add a small amount to the flour many times, stir into a dough without dry flour, and knead it into a dough with moderate hardness and softness.

(The water absorption rate of each flour is different, so add water in small amounts and many times to prevent it from being too dry or too wet.) )


2. Recently, the weather is relatively cool, if you want to ferment faster, we can proofing through warm water, and the water temperature can be controlled at about 35 degrees.

(The water temperature should not be too high, including the water of the dough, it is okay to control it at about 35 degrees, if the water temperature is too high, the yeast is easy to lose its activity.) )


3. Soak a handful of dried plum vegetables in advance, wash and chop after soaking.



4. Prepare some pork filling, add an appropriate amount of minced ginger, chopped green onion, salt, light soy sauce, dark soy sauce, thirteen spices, sesame oil, mix well and set aside.


5. Pour the chopped umeboshi into the stirred meat filling and mix well.



6. The volume of the dough is significantly expanded, which means that it is ready.


7. Take out the dough and knead it to exhaust, knead it into long strips, and divide it evenly into pieces, here I divide it into eight points.



8. Knead each piece of small dough evenly and arrange it into a circle. Wrap in another layer of cooking oil, cover with plastic wrap and let rise again for 20 minutes.




9. Pinch the awakened dough, put in the filling, and close it like a bun.



10. Tidy it up, roll it out into a cow's tongue shape, sprinkle with a layer of sesame seeds, and use a rolling pin to compact the sesame seeds. It doesn't matter if the cake is broken, it will be more fragrant if it leaks some oil.




11. Preheat the oven in advance and bake at 180 degrees for 20 minutes, each oven has different characteristics, so observe the coloring.

(If you don't use an oven, you can also use a pan or electric baking pan.) )
