Ingredients: 4 eggs, 2 salted egg yolks, a handful of seafood mushrooms

Seasoning: 1 small piece of ginger, appropriate amount of chopped green onion, 1 spoon of light soy sauce, 1 spoon of balsamic vinegar, appropriate amount of sugar, a little salt

Step 1:

First of all, prepare two small bowls, crack the eggs, separate the egg whites and yolks, and put them in two separate bowls for later use. Be careful when knocking and try not to break the yolk to avoid mixing it into the egg white.

Step 2:

Next, process the seafood mushrooms, cut off the roots and caps of the seafood mushrooms, tear them along the fibers of the seafood mushrooms with your hands after washing, and then cut them into small pieces, then boil water in a pot, blanch the seafood mushrooms in boiling water for 1 minute, and remove them for later use. The seafood mushroom itself has an umami flavor, and after processing, it is closer to the fiber and texture of crab meat.

Step 3:

Cooked salted duck eggs, take out the yolks, crush them with a spoon to puree, I used two egg yolks.

Step 4:

Add the blanched seafood mushrooms to the egg whites, add a pinch of salt, beat the egg whites and stir well. Similarly, add the crushed salted egg yolk to the egg yolk and stir well, because the salted egg yolk itself has a salty taste, so you don't need to add extra salt.

Step 5:

Next, we need to mix a "crab" soul sauce, prepare a small bowl, add chopped ginger, a small spoon of light soy sauce, a spoonful of balsamic vinegar, and half a spoon of sugar and stir well.

Step 6:

Heat the oil in a wok, slowly pour the egg white and seafood mushroom mixture into the pan, stir over medium-low heat until the egg white is solidified, pour in half of the seasoned sauce and put it on a plate.

Step 7: Add a little oil to the pot, pour in the egg yolk mixture after the oil is hot, stir over medium-low heat, put the egg yolk on the scrambled egg white after it solidifies, pour in the remaining sauce, and sprinkle some chopped green onions to decorate.

Tips:

1. When processing seafood mushrooms, you must tear them by hand to make fibers similar to crab meat appear.

2. Ginger vinaigrette is the finishing touch of this "crab race" and must not be omitted.

3. Pay attention to the heat when stir-frying, don't turn on the high heat, the eggs will not be like crab meat when they are scrambled.
