Matcha semi-cooked cheesecake
【Materials & Tools】
1 square mould of 15cm × 15cm
1) Foundation
130 grams of biscuits, 65 grams of dissolved unsalted butter,
2) Matcha paste
30 grams of fresh cream, 2 teaspoons of Uji matcha powder, 10 grams of sugar
3) Matcha cheesecake
30 ml water, 10 grams of gelatin powder, 30 grams of whipped cream (A), 2 teaspoons of matcha powder, 200 grams of cream cheese, a pinch of salt, 80 grams of sugar, 200 grams of yogurt, 170 grams of whipped cream (B).
【How to do it】
1. Preparation.
Now the bottom layer of the mold is covered with a 15cm piece of oiled paper, which is convenient to take down when the time comes.
2. Do the bottom layer first.
Put the cookies in a crisper bag and pound them with a rolling pin.
Mix directly in the bag with dissolved unsalted butter.
Put the top mixture into the bottom of the mold, press it evenly, and put it in the refrigerator to ice for a while.
3. Make matcha sauce for later use (this is used for latte art). Pour the matcha into the whipped cream, add the sugar, and mix well.
4. Make cake dough
Soak the gelatin in water for about 5 minutes to soften.
Pour the matcha into 30g of whipped cream (A) and mix well.
In a bowl, add the cream cheese and salt, whip until creamy, add sugar and mix.
Add the whipped cream and the matcha batter on top (a mixture of 30g of whipped cream and matcha), heat the gelatin in a 600W microwave for 20 seconds, and mix well in a bowl.
Add the regular yogurt and mix well.
Add 170g of whipped cream (B) in batches.
Start by adding a third of the cream. Mix from the bottom with a rubber spatula.
Add the remaining whipped cream in two more portions, and finally, stir thoroughly.
5. Start shaping.
Put the finished matcha dough into a mold.
Pour in the matcha paste with the help of a spoon as shown in the picture.
I use the tip of a bamboo skewer to randomly pull a flower shape on the superficial layer of the cake batter to form a marble pattern, which I love to play with the most, and it feels like painting on a soft batter, which is so artistic.
6. Cool in the refrigerator.
Place in the refrigerator for about 2 hours and allow to cool and solidify.
7. Take out the demoulding.
As shown in the picture, find a lighter or something, let the mold warm up a little, and then you can remove the mold, which is very similar to making popsicle ice cream.
