【Homemade Tofu】
Prepare the ingredients:
1 piece of old tofu, 2 eggs, appropriate amount of starch, appropriate amount of fungus, 1 carrot, green onion, ginger, garlic, green pepper, millet pepper, 1 spoon of Pixian bean paste, 1 spoon of oyster sauce, 1 spoon of light soy sauce, half a spoon of dark soy sauce, half a spoon of sugar, appropriate amount of salt.
The steps are as follows:
1. Cut the tofu into cubes and try to cut them as evenly as possible.
2. Pour an appropriate amount of starch into the plate, and evenly hang a layer of starch on the cut tofu.
3. Crack 2 eggs in a bowl and stir into egg mixture.
4. Pour the egg wash over the tofu so that the surface of the tofu is crispy when frying.
5. Pick up the plate and shake it a few times to evenly coat the tofu with the egg mixture.
6. Put 1 tablespoon of oyster sauce, 1 tablespoon of light soy sauce, half a spoon of dark soy sauce, half a spoon of sugar, an appropriate amount of salt, pour in a little water and stir into the juice.
7. Shred the carrots and fungus.
8. Pour oil into the pot, heat the oil temperature to 4, put in the tofu and fry, fry until golden brown on both sides, and then remove it.
9. Leave the bottom oil at the bottom of the pot, add the green onion, ginger, garlic, Pixian bean paste and stir-fry until fragrant, and fry the red oil.
10. Add shredded carrots and shredded fungus and stir-fry evenly.
11. Add the tofu, stir-fry a few times and pour in the sauce.
12. Finally, add the green and red peppers, stir-fry a few times and you can get out of the pot.
Tips:
1. I use old tofu for tofu, and the tofu fried in starch has a crispy skin.
2. Stir the eggs into an egg wash and pour them on the tofu to make the tofu more tender.
