Crispy fritters
Dough: 500 grams of plain flour, 20 grams of Angel aluminum-free fritters fluffing agent, 1 egg, 250 grams of water, 20 grams of corn oil.
Oil for frying fritters: Put the appropriate amount of oil according to the size of the pan.
First put 500 grams of plain flour in a basin, pour in a 20 gram bag of Angel aluminum-free fritters fluffing agent (I use this one, you can also use others), stir well, beat an egg, add 250 grams of water and stir into a flocculent, then drizzle 20 grams of corn oil, and knead it into a slightly softer and smooth dough.
Since the aluminum-free fritters fluffy agent contains salt, the taste of my house is relatively light, so I didn't add additional salt. If the taste of your home is generally on the heavy side, you can put another 2-3 grams of salt in moderation.
Since corn oil is added to the dough, the dough is not sticky at all, so the dough is moved to a cutting board, cut in the middle and divided into two equal portions, and kneaded into the shape of a round steamed bun.
Take one of them and roll it into an oval dough sheet, thin the bottom edge, and roll it up from the bottom down, this step makes the fried dough sticks more layered.
The other is done in the same way, brush the surface with a layer of oil, cover with plastic wrap and seal and let stand for more than two hours. Brushing oil can lock in moisture, and secondly, the dough has better ductility.
Gently stretch the dough and flatten it into strips about 6 cm wide and 1 cm thick.
Cut into small strips about 3 cm wide.
Stack two of them together and press them straight down from the middle with chopsticks.
Pinch the ends and gently stretch them slightly.
Put oil in the pot and cook it over medium heat until it is hot until it is five or six percent hot, then add the fritters to float quickly, turn them over quickly and repeatedly, and the fritters will slowly bulge.
Fry until golden brown on both sides, then remove the oil. Make it at home, healthy and hygienic, and eat with more peace of mind.
