【Steamed chicken with shiitake mushrooms】
1. Ingredients: half a chicken, 1 bowl of shiitake mushrooms, 9 cloves of garlic, 1 piece of ginger, a little coriander, an appropriate amount of flour, an appropriate amount of starch, 1 spoon of baking soda, 2 spoons of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of oyster sauce, 2 spoons of cooking wine, 2 spoons of soybean paste, a little pepper, an appropriate amount of salt, and an appropriate amount of cooking oil.
Second, the practice of steaming mushroom chicken:
1. Prepare all the ingredients, put the chicken you bought home into a pot, then add 1 tablespoon of flour first, and wash the chicken pieces with your hands until they are a little sticky. Wash the chicken pieces with clean water, then drain and place in a bowl. Then add 1 tablespoon of baking soda and mix well with your hands to make the chicken more tender. Set aside for 5 minutes, then rinse off with water.
2. Peel the garlic first, then crush it with a knife, and then chop it into minced garlic. Peel the ginger, wash it, slice it first, then chop it into minced ginger and put it together in a bowl. Boil some hot oil and pour it into a bowl to bring out the flavor of the spice. After stirring well, start seasoning, add 1 tablespoon of dark soy sauce, 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of cooking wine, 2 tablespoons of soybean paste, a little pepper, and then stir well with chopsticks, and our sauce is ready. Because dark soy sauce, light soy sauce, and soybean paste are all salty, there is no need to add extra salt, otherwise it will be a little salty.
3. Pour the seasoned sauce into the cleaned chicken pieces and mix well with your hands. Remember to grab it a little longer to make the chicken pieces more flavorful. Set aside the chicken pieces and marinate for 20 minutes.
4. Put 1 tablespoon of starch into the shiitake mushrooms, add enough water, and soak the shiitake mushrooms for about 5 minutes. Then wash it with water, and in order to make the shiitake mushrooms more flavorful, we can put a flower knife on top of the shiitake mushrooms. Boil a pot of boiling water, add 1 tablespoon of salt to increase the base flavor after the water boils, then pour the shiitake mushrooms into the pot and blanch for 1 minute. When the time is up, take out the blanched shiitake mushrooms and pass them in cold water. After washing, squeeze out the water and put it in the basin.
5. Put the marinated chicken pieces into the mushroom bowl and spread evenly. Prepare a steamer, put the basin with the chicken pieces with shiitake mushrooms in it, cover it, bring it to a boil over high heat, and then continue steaming for 30 minutes.
6. When the time is up, remove the lid of the pot, and the shiitake mushrooms and chicken are paired together, which is really nutritious and delicious, and the aroma is tangy. Sprinkle a little coriander segment before cooking, and it will look beautiful and appetizing.
