2. Wash the peeled bamboo shoots and cut them into long strips.
3. Soak the shiitake mushrooms in advance and cut them into thick slices. Pork, green onions, ginger and garlic are also available.
4. Remove from the pot and add a little salt. After the water boils, blanch the cut bamboo shoots for 30 seconds, quickly remove them, and remove their green and astringent taste.
5. Put oil in another pot, add green onion, ginger, garlic, pork and cooking wine and stir-fry until broken.

6. Pour in boiling water, add salt, a few rock sugars, light soy sauce, dark soy sauce, bring to a boil over high heat, turn to medium heat, cover the pot, and slowly simmer until the soup thickens.
Before cooking, add the chopped green pepper (or green garlic) and stir-fry, finally pour in a little sesame oil, and mix well.
Remove from the pan.
