Today, pears are used to make mala cakes, which are fragrant, soft and glutinous, and more nutritious to eat.
Here's how I made it:
1. Prepare two pears, peel them and cut them into small pieces.
2. Put it in a food processor and beat an appropriate amount of water into juice. Probably 560 ml of pear juice is needed.
3. Add 200g of flour, 100g of tapioca starch, 3g of aluminum-free baking powder, 3g of yeast and 30g of sugar to the bowl and stir well. Add 280ml of pear juice and mix into a sticky paste. Cover with plastic wrap to proof.
4. Put 200g of flour and 100g of tapioca starch in another bowl, add 3g of aluminum-free baking powder, 3g of yeast, 30g of sugar, 15g of purple sweet potato flour, and stir well. Pour in 280ml of pear juice and stir into a sticky paste. Cover with a layer of plastic wrap to rise.
5. The volume is significantly expanded, that is, it is good.
6. Add 20g of cooking oil and two spoons of cooked sesame seeds to the dough of two colors, stir well.
7. The bottom of the mold is covered with a layer of silicone oil paper, or the bottom and inner side of the mold can be brushed with a layer of cooking oil. Pour the batter separately and spread flat.
8. Vibration exhaust.
9. Close the lid and let rise again for 15 minutes. Turn on the high heat and steam for 30 minutes, turn off the heat and simmer for another 5 minutes.
10. Take it out and let it cool, don't touch it first, wait until it is completely cool before demolding.
11. Demold after cooling completely and cut into your favorite shape.
