500 grams of pork leg meat, 1 potato, 1 piece of ginger, 5 cloves of garlic, 1 egg, 60 grams of starch, 1 spoon of sake lees, and an appropriate amount of chopped green onions.

method

Step 1: Wash the lean meat and cut it into two centimeter thick slices, then cut it with a cross knife on top, do not cut it off, then cut it into small cubes of two centimeters, cut it and put it in a large bowl, and then cut the garlic and ginger into minced pieces for later use.

Step 2: Peel the potatoes and cut them into small cubes for later use.

Step 3: Add the minced ginger and half of the minced garlic to the lean meat and beat in an egg.

Step 4: Mix in a small spoon of salt and chicken essence, pour in 60 grams of sweet potato starch, and a spoon of red grains, red grains are used for color mixing, if not, you can leave it alone, and then pour in a little water, water can dissolve the starch.

Step 5: Then fully grasp and mix well with your hands, so that each piece of lean meat is coated with a layer of starch and marinated for another 20 minutes.

Step 6: Mix another bowl of sweet and sour sauce, pour 20 grams of sugar, 20 grams of tomato paste, 20 grams of aged vinegar into the bowl, stir with chopsticks until the sugar melts and set aside.

Step 7: Heat the pot and pour in the cooking oil, the amount of oil can not exceed the meat, put it into the oil pot with chopsticks to bubble immediately when it is fried, put in the marinated lean meat and fry, put it in pieces to prevent sticking together, put it all in with chopsticks and turn it, and fry it over medium heat until the appearance is slightly yellow, I used it for about 3 minutes.

Step 8: Scoop up the fried lychee meat and drain the oil and put it in a bowl.

Step 9: After one minute, put the lean meat back into the oil pan and fry it again, fry it over medium heat for 30 seconds, then drain the oil and put it in a bowl for later use.

Step 10: Add the potatoes and fry them over medium heat for two minutes.

Step 11: Drain the fried potatoes and set aside on a plate.

Step 12: Add the other half of the minced garlic to the pot and stir-fry until fragrant, then pour in the sweet and sour sauce and bring to a boil.

Step 13: Pour in the fried potatoes, stir-fry half of the lychee meat evenly, put it on the plate and enjoy the food, and save the other half of the lychee meat for the next meal.
