Loofah mushroom lean meat soup, seaweed shrimp and egg soup, broccoli tofu egg soup


 

【Luffa mushroom lean meat soup】

- Ingredients and seasonings: lean meat, white mushrooms, green onions, ginger, garlic, a pinch of salt, a pinch of light soy sauce, 1/2 tablespoon of oyster sauce, 1 tablespoon of starch.

- Cooking process:

1. Add a pinch of salt, a little light soy sauce, half a tablespoon of oyster sauce and 1 tablespoon of starch to the lean meat, mix well and marinate for 10 minutes.

2. Stir-fry chives, ginger and garlic in hot oil, pour in sliced white mushrooms and stir-fry for a while.

3. Then add 2 bowls of water and bring to a boil, then add the marinated lean meat and bring to a boil.

4. Pour in the loofah and cook over medium heat for 5 minutes, add an appropriate amount of salt to taste, and then add chopped green onions.


【Seaweed shrimp and egg soup】

- Preparation of ingredients and seasonings: 2 eggs, 1 pack of shrimp slippery, seaweed, ginger, shallots, coriander, soy sauce, vinegar, sesame oil.

- Cooking process:

1. Wash and chop the ginger, shallots and coriander for later use.

2. Beat 2 eggs, fry them in a pan and fry them into egg skins, and shred them for later use.

3. Add water to the pot, add ginger slices and bring to a boil, then put in the shrimp and cook until it floats.

4. Then add the seaweed, bring to a boil and pour into a bowl.

5. Add chopped green onion, coriander and shredded eggs to the bowl, add some soy sauce, vinegar and sesame oil and stir well.


【Broccoli tofu and egg soup】

- Ingredients and seasonings: 1 egg, 1 soft tofu, broccoli, chopped green onion, shredded ginger, salt, chicken essence.

- Cooking process:

1. Cut the broccoli into small flowers, cut the tofu into cubes, beat the eggs and fry them in the pan, cut a little green onion and ginger shreds.

2. Put a little oil in the pot, add chopped green onion and ginger and stir-fry until fragrant, then add a bowl of water, pour in tender tofu and broccoli.

3. Fry the eggs in open water, put a little salt, a little chicken essence, and get out of the pot in 2 minutes.
