Spread the purple potato puree evenly in the middle of the toast slices, leaving a little blank space around it so that the purple potato puree will not run out of the toast slices when pressed for a while.

Cover it with another sheet of toast and gently press it with your hand so that it fits snugly against each other.

Brush a pan with a thin layer of oil, heat it over minimal heat, and coat the toast slices in the egg mixture and fry them for easy coloring.
