 Pork belly stewed with rape tofu

Ingredients required

Pork belly, rape, tofu, green onions, ginger and garlic, salt, peppercorns, star anise, cooking wine, soy sauce, thirteen spices, white pepper, a little vinegar, chicken essence can be put or not.

Cooking steps:

Step 1: Clean the pork belly, put cold water in a pot, bring to a boil, and blanch for 3 minutes. Immediately after removal, soak in cold water for three or four minutes.

After that, remove and drain the water.

Step 2: Wash the rape.

Bring enough water to a boil over high heat and blanch the rape in boiling water for one minute.

Shower immediately after removal. Because if you don't take a shower, the residual temperature will gradually lose the crispiness of the rape after a long time.

But don't soak, it will become tender after soaking for a long time, so squeeze out the water immediately and set aside.

Then cut it and set aside, don't cut it too big, it will make the dish look bad.

This trick was commonly used at home when I was a child, because if it was blanched, it would not have the taste of lettuce after it was stewed.

Step 3: Slice the pork belly. It really takes a sharp knife to cut meat, and my kitchen knife hasn't been sharpened for a long time, it's a bit blunt, and it's not very easy to cut.

Step 4: Heat the oil over medium heat, the oil is hot, first add the peppercorns and star anise and stir-fry until fragrant, then add ginger and garlic and stir-fry until fragrant.

Step 5: Add the pork belly and stir-fry, when it is fried to a certain extent, add an appropriate amount of thirteen spices, cooking wine, and add a little soy sauce to enhance the flavor and color.

After stir-frying for 2 minutes, add a large bowl of water, cover and simmer for 15 minutes, turning the heat from high heat to medium-medium.

However, after 10 minutes, when the meat is simmered until it is six or seven soft, remember to add salt.

During the meantime, the tofu is cut and ready at the same time.

Step 6: After 15 minutes, add an appropriate amount of white pepper, add small rape and tofu, cover the pot and simmer for two minutes.

Step 7: Remove the lid, add a little old vinegar, and add a little chicken essence if you want to improve the freshness, stir-fry evenly and you can get out of the pot.

Step 8: Serve. When your family sees this bright dish, they will definitely give you a thumbs up, and you can start it, whether it's noodles or rice under steamed buns.
