Ingredients: 1000 grams of pork ribs, 2 tablespoons of sugar, 4 tablespoons of vinegar, appropriate amount of salt, 2 tablespoons of braised soy sauce, cooking wine, appropriate amount of chopped green onion.
Method:
1. Wash and chop a large section of pork ribs, I chop them for a long time, haha It is more enjoyable to eat like this.
2. Boil water, put a spoonful of cooking wine in the water, fry and blanch the pork ribs, remove and wash off the foam for later use.
3. Take a large bowl and stir together 2 tablespoons of sugar, 4 tablespoons of vinegar and 2 tablespoons of teriyaki soy sauce.
4. Heat the pot, add 2 tablespoons of cooking oil, fry the sliced ginger and garlic cloves, and fry them until fragrant.
5. Then put in the processed pork ribs and stir-fry, fry the water vapor on the pork ribs, and fry until the surface is slightly charred.
6. Then pour in the seasoned sauce, then add water and salt. I use a micro pressure cooker, so I don't need to add too much water, if it's a regular saucepan, I add more. After boiling, simmer for 40 minutes, turning a few times in between.
7. Finally, drain the soup, add chopped green onions and stir-fry well, then turn off the heat. The soup should be dried out of the oil to be delicious, and the soup should be put on a plate and sprinkled with sesame seeds.
Tips:
When making sweet and sour sauce, it is best to use aged vinegar, which has a strong sour taste and a more beautiful color. If you don't have aged vinegar at home, you can also use balsamic vinegar instead, and the dosage should also be adjusted according to the above proportion.
Ordinary white sugar can also be used for sugar, the sweetness of rock sugar will be slightly lower, and a little bit can be adjusted according to personal taste.
I use teriyaki soy sauce, you can use ordinary soy sauce, personally recommend not to use dark soy sauce, otherwise the ribs will become black charcoal.
During the production process, some of the vinegar will evaporate, so sprinkling vinegar into it before it comes out of the pot will increase the vinegar aroma and make the taste better.
