1. Pour 300 grams of glutinous rice flour into the basin, beat 1 egg, 50 grams of sugar, 3 grams of yeast, use 250 ml of warm milk and noodles, high temperature can accelerate yeast fermentation, but not too high, otherwise the yeast will be scalded to death and lose its fermentation effect, about 30 degrees is the most suitable temperature for yeast fermentation, the amount of sugar can be increased or decreased according to your own taste, and the sweetness of 50 grams is moderate.

2. The batter should be dried, so that the steamed cake is not easy to collapse, cover the plate and seal and ferment to twice the size. Put it in a warm place to speed up the fermentation, it takes about 1 hour, if you eat it for breakfast, you can mix the batter in the evening, put it in the refrigerator to refrigerate and ferment, and use it in the morning on the second day to save time.

3. After the batter is ready, stir it with chopsticks to expel the air in the batter, and it will not collapse when steaming.

6. Put it in the pot for a second proofing for 15 minutes, the second proofing can make the steamed fat cake more soft.

7. Steam over high heat for 15-20 minutes after steaming, turn off the heat and simmer for 3 minutes after steaming.
