【Second course】 Stir-fried meat with chili peppers
Materials:
500g of screw pepper, 200g of pork belly, 10g of millet pepper, appropriate amount of sugar, a little dark soy sauce, a little light soy sauce, an appropriate amount of Huadiao wine, ginger slices, green onions, garlic cloves, and a few peppercorns
Step 1:
Cut the pork belly into thin slices (how thin you can secretly decide by your own knife maker) and set aside
Step 2:
Clean the peppers, remove the stems and seeds, and cut into thin strips for later use
Step 3:
Heat the pan with cold oil, add the peppercorns, stir-fry the fragrance of the peppercorns, then remove them, and put in the pork belly slices
Step 4:
After the pork belly is fried until it changes color slightly, add ginger slices and continue to stir-fry to remove the fishy smell, add millet pepper, green onion and garlic slices, stir-fry evenly, and then add cooking wine, light soy sauce and dark soy sauce

Materials:
6 chicken thighs, 6 potatoes, 10g cooking wine, 50g rock sugar, 2 tablespoons of oil, 1 green and red pepper, 2 tablespoons of light soy sauce, appropriate amount of ginger, appropriate amount of garlic, appropriate amount of shiitake mushrooms, 8g of salt, 2 tablespoons of soybean paste
Step 1:
Wash the chicken thighs and cut them into pieces, add cooking wine to the pot under cold water and cook the blood foam
Step 2:
Cut the potatoes into hob pieces for later use, cut the green and red peppers into pieces for later use, and soak the dried shiitake mushrooms for later use
