【Ingredients Preparation】
Ingredients: 4 eggs, 100 grams of shrimp, 1/2 carrot
Excipients: Appropriate amount of green onion and ginger
Seasoning: light soy sauce, cooking wine, sugar, white vinegar, oil and salt
【Production process】
Step 1: Open 5 eggs and prepare the egg whites and yolks separately.
Tip: Add a little water to the separate egg whites and egg yolk bowls so that the scrambled egg pieces are tender.
Step 2: Peel and chop the ginger (a little less ginger), cut the green onion and set aside, remove the shell of the shrimp, chop it into minced meat, slice the carrot and put it in the pot to blanch (add oil and salt), blanch and remove it and put it on a plate for later use.
Step 3: Put minced ginger, sugar, white vinegar and cooking wine into a bowl and stir evenly for later use.
Step 4: Place the minced shrimp in a bowl of egg whites and yolks (add a pinch of salt), stir well and set aside. Heat the pan with cold oil, pour in the egg whites, pour some of the prepared minced ginger juice, sprinkle in chopped green onions, and slide into egg cubes for later use.
Tips: It is best to blanch the shrimp in advance, because the slippery egg pieces are faster and tenderer, and the shrimp are easy to cook after blanching.
Step 5: Pour the stirred egg yolk liquid into the pot (add a little salt), pour in the minced ginger juice, sprinkle in chopped green onion, and slowly slide into egg pieces for later use.
Step 6: Place the egg whites under the plate, top with egg yolk cubes, and serve.
