1. After the meat is cleaned, cut it into small pieces and put it in the meat grinder to grind the meat foam (it is best to buy seven points lean and three points fat pork, so that the taste will be better);
2. During the meat grinding time, cut the cleaned ginger and chop the green onion and put it in a bowl for later use;
3. After the meat foam is grinded, take it out and put it in a bowl, pour in the chopped green onion and ginger foam, add salt, chicken essence, sugar, pepper, egg liquid, light soy sauce, dark soy sauce and starch and stir well in one direction by hand, stir it up and put it aside for later use;
4. Put the stirred meat filling into the tofu coat and wrap it;
5. After everything is done, add an appropriate amount of oil to the hot pan, then put the finished tofu and meat into it and fry it until one side is golden brown, then turn it over to the other side and continue to fry;
6. Both sides are fried golden brown, turn off the heat and put it on a plate for later use;
7. Start another pot, add an appropriate amount of oil, put the minced ginger in and stir-fry until fragrant, then turn to the lowest heat, add an appropriate amount of water, dark soy sauce, cooking wine, and sugar, stir well, and then put the tofu and meat in to cook;
8. Turn on high heat and boil, then turn to medium-low heat and cook for about 15 minutes;
9. When the time is up, open the lid, turn on the high heat to collect the juice, the juice is already very viscous, and you can put it out of the pot and put it on the plate;
10. Sprinkle some chopped green onions on the surface, pour the soup on the Shanghai local vegetable tofu and wrap the meat, and it is ready;
