In the Northeast, there is a famous dish called stewed goose in an iron pot, and the moment you lift the lid, the aroma is overflowing. Sitting around the whole family, eating sauerkraut and nibbling on goose meat, is the happiest moment.




Prepare the ingredients

Half a goose

Wash 2 bags of sauerkraut and set aside

Cut half a green onion into sections

3 cloves of garlic, cut into cubes

1 piece of ginger (slice 3 slices of blanched goose, 1 piece of stewed goose)

One star anise

A piece of cinnamon

2 bay leaves

4 tablespoons cooking wine (2 tablespoons goose meat, 2 tablespoons stewed goose meat)

3 tablespoons light soy sauce (1 tablespoon sauerkraut, 2 tablespoons stewed goose)

1 tael - 2 taels of cooking oil

2 seasoning spoons of salt

1 seasoning spoon of essence of chicken

Frozen geese need to be blanched, and their own fresh geese are better fried. The goose is huge, and I only used half of it.

method

1⃣️ Big goose in a pot under cold water, add 2 tablespoons of cooking wine and 3 slices of ginger, and bring to a boil over high heat to boil out the blood foam in the goose meat. Remove and rinse with clean water, drain and set aside.

2⃣️Don't keep the goose meat of the goose, cut it off and put it in a wok, fry the goose fat, put in the washed sauerkraut and stir-fry evenly, and fry the water of the sauerkraut. Add 1 tablespoon of light soy sauce and stir-fry to color, stir-fry the sauerkraut and set aside.


3⃣️Add cooking oil to the pot, this can be added a little more, the sauerkraut is very absorbent, and the goose meat and sauerkraut with big oil are more delicious. After the oil boils, add green onions, ginger, garlic, star anise, cinnamon, bay leaves, and stir-fry until fragrant.

4⃣️Add the goose meat with plenty of water and stir-fry, fry the moisture of the goose meat dry, add 2 tablespoons of light soy sauce and stir-fry to color, and add 2 tablespoons of cooking wine to remove the smell.

5⃣️Add the water that has not been used to bring to a boil over high heat, cover the pot and turn to low heat and simmer for 1 hour.


6⃣️ After an hour, open the lid of the pot, remove the ingredients (green onions, ginger, garlic, star anise, cinnamon, bay leaves), put in the fried sauerkraut, add 2 seasoning spoons of salt, bring to a boil over high heat, cover the pot, turn to low heat and simmer for about 20 minutes.

7⃣️ After 20 minutes, open the lid and add 1 seasoning spoon of chicken essence to taste.
