Potatoes, salt, tomato paste, ground black pepper, cooking oil
1. Peel and wash the potatoes, cut them in half lengthwise, and then cut them into thick strips of about 1cm. Try to choose the oblong ones for the potatoes here, and the fries will be of the right length.
2. Add water and an appropriate amount of salt to the pot and boil, put the potatoes into the pot and boil until they are half cooked, remove and drain the water.
3. Put oil in the pot and burn it until it is hot, that is, when you can feel the obvious heat when the palm of your hand is placed on the top of the pot, put the potato strips into the pot and fry them. When you see that the potato strips are golden brown and the surface is crispy, drain the oil from the pan, sprinkle with a little salt and ground black pepper, and dip with tomato sauce.
There are roughly two kinds of potatoes that are commonly eaten: one is a crisp potato with a relatively high water content, which is yellowish in color, suitable for stir-frying or mixing, and the other is a potato with less water content, which is white in color, and such potatoes are suitable for stewing and boiling.
