method

1. Beat one to two eggs on a plate, add half a tablespoon of salt, a teaspoon of light soy sauce and stir well.


2. Cut off the roots of enoki mushrooms, wash them, divide them into small portions and evenly coat them with egg mixture.


3. Then evenly cover with dry starch, as much as possible, so that the shell is crispy and tastier.


4. Heat the oil temperature to 70% hot, put enoki mushrooms, fry until the color is golden brown, take out and put on a plate, sprinkle with pepper powder or barbecue powder.

 Tips:

1. I didn't make much this time, so one egg is just right.

2. If the enoki mushrooms are cut apart, it doesn't matter, use chopsticks to clamp the root before putting it in the oil pan, and then release it when it is clamped into the oil pan.

3. Don't burn the oil until it smokes, the oil temperature is too high and it is easy to fry the paste. You can try it with a enoki mushroom, put it in and sink it, and small bubbles appear around it and float up again.
