How to make it:
1. First of all, prepare a few screw peppers, and break the screw peppers into small pieces by hand, so that the fried screw peppers are particularly green.
2. Add some salt and water to the broken screw pepper and soak it for about eight to ten minutes.
3. After preparing five eggs and beating them into the plate, add a little salt, and add a few drops of white vinegar to remove the fishy smell of the eggs themselves, and then stir evenly and set aside.
4. Cut some pork belly slices and set aside.
5. Heat the oil, be sure to heat the pan and cool the oil before adding the egg liquid, and then push forward to fry, push the scrambled eggs into large flakes, so that the scrambled eggs are not easy to break, fry and set aside.

7. After the sauce is fried until fragrant, add half a spoon of soy sauce, then add the screw pepper and stir-fry until it is broken.
8. After the screw pepper is broken, add the eggs, add some salt, chicken essence and sugar to taste, stir-fry evenly, cover the lid and simmer for two to three minutes.
9. After simmering, remove the lid of the pot, add an appropriate amount of water starch to hook a thin thickener and stir-fry evenly, and then add a little sesame oil and coriander and stir-fry a few times, and the food can be ready.
