Today, I use yam to share a dough cake, the leavened food is easy to absorb and digest, the method is simple, suitable for the elderly and children.
【Required Documents】
2 yam, 30 g sugar, 60 ml pure milk, 3 g yeast, 200 g flour.
【Steps】
1.2 Wash the yam, remove the skin, and then cut into small pieces. Place in a pan, pot with cold water and steam for 15 minutes.
2. Steamed until soft and rotten, the chopsticks can be broken when poked, put it in a large basin, add 30 grams of sugar, mash it with a rolling pin, and do not add it if you don't eat sugar.
3. Add 60ml of pure milk to it, stir well, pour 3 grams of yeast and 200 grams of flour into it, and stir until the dough is flocculent.
4. Knead the dough into a dough that is not dry or hard, no need to ferment at first, and only need to ferment once later.
5. Sprinkle some dry powder on the cutting board, move the dough over, press it slightly flat, and roll it into a thin sheet with a rolling pin, with a thickness of about 0.3 cm. Find a cup, the size you like, and print a round mold on the dough.
6. Take out the leftovers and knead them into a ball, then roll them into dough sheets, and then print out the model, cover them with a fresh-keeping bag after all are done, and let them rise for an hour. The green billets should not be stacked, but should be placed at intervals.
7. When the time is up, pick up the green billet, you can see that it has become fat, and it feels light and fluttering.
8. Remove from the pan and preheat, do not brush the oil, and put in the green billet. Turn on the lowest heat, close the lid and sear slowly.
9. Turn it over after the bottom is shaped and discolored, cover it with a higher lid and continue to burn.
10. Bake until both sides are golden, the cake body is bulging, and the cake surface will rebound quickly when pressed, indicating that it is fully cooked and ready to be cooked.
Tips:
1. Milk can be replaced with an equal amount of water. If you don't like to eat sugar, you can skip or add salt, it tastes very fragrant.
2. After making the green billet and fermenting it for about an hour, you can directly put it into the pot, do not press the green billet into the pot, so that it will not be fluffy and burned into a dead surface.
