【Beef stew with tomatoes】 

 【Ingredients Required】

Seasoning: 2 tablespoons of light soy sauce, 1 tablespoon of sugar, appropriate amount of salt, appropriate amount of water, appropriate amount of salad oil, 2 slices of ginger, a little chopped chives

 【Steps】 

1. First of all, prepare the ingredients, clean the beef, cut it into larger and even meat pieces, add an appropriate amount of cold water to the pot, put the beef in a pot under cold water, boil the blood water over high heat, and then use a spoon to skim off the surface foam.  


2. After blanching, take out the beef pieces, rinse them with warm water, drain them and set aside. Peel the potatoes and cut them into small pieces with a hob, soak the cut potatoes in water to avoid oxidation and discoloration, and cut the tomatoes into small pieces with a hob and put them on a plate for later use, cut the chives into chopped green onions, and cut the ginger into small slices.

Pour an appropriate amount of cooking oil into the pot, add chopped green onions and ginger slices to fry the fragrance, then pour in the onion and half of the tomatoes, fry the tomatoes out of the soup over low heat, and then put in the beef pieces and stir-fry evenly, pour in light soy sauce and sugar and stir-fry until the beef is colored, and then add an appropriate amount of water, because the beef is hard, and the stewed time will take a long time to be soft, and adding water halfway will affect the taste.

Tomatoes can be peeled or not, and if you peel them, you can make a cross on the top of the tomato, scald them with boiling water, or boil them in boiling water, and the skin can be easily torn off.


3. After the heat boils, cover the lid, turn to medium-low heat and simmer for about 1 hour, pour the potato pieces into the pot and continue to simmer for 20 minutes, at this time, add the remaining tomatoes and simmer for a few minutes, then add an appropriate amount of salt to taste, and sprinkle a little chives or coriander after the pot.
