Cooking method:

Step 1: First clean the fresh shiitake mushrooms you bought, cut off the roots with scissors, change the knife and cut it into cubes, cut the pork belly into cubes, cut the shallots into chopped green onions, and cut the ginger and garlic into minced pieces for later use.


Step 2: Boil water in a pot and add a little sugar to remove the peculiar smell of shiitake mushrooms;


After the water boils, pour in the shiitake mushrooms, blanch for one minute, then remove the water and set aside.


Step 3: Heat the pan with cold oil and add the diced meat cut in advance, fry over low heat until fragrant;


Then add green onions, ginger and minced garlic on low heat and fragrant;


Step 4: Add the blanched shiitake mushrooms, don't rush to put the soy sauce seasoning at this time, first fry the water in the shiitake mushrooms over medium heat, so that the shiitake mushrooms will be more delicious and flavorful.


Step 5: After the water is dry, add a small half spoon of light soy sauce and a little cooking wine to remove the smell of the minced meat, and then stir-fry evenly;


Then add a little thirteen spices, a tablespoon of soybean paste and stir-fry evenly to bring out the fragrance;


The flavor of the steamed sauce is the best, stir-fry the flavor of the sauce, add two spoons of water, and add a little dark soy sauce to color.


Step 6: Cook slowly over low heat, cook until the soup is thick, and when the mushroom flavor is strong, you can put it out and put it in a deeper plate, and the mushroom sauce can be used to mix noodles directly, and the rice is delicious;
