Ingredients
Yuba, tomato, fungus, green and red pepper, tomato paste, bean paste, starch, egg, light soy sauce, oyster sauce, salt, chicken essence, sugar, green onion, ginger and garlic.

1. Soak the dried yuba in warm water, add a spoonful of salt and a spoonful of vinegar to the water, which can speed up the soaking time, and make the yuba soak evenly, so as to avoid the appearance of the yuba soaked on the outside and the inside.
Then wash the soaked yuba and cut it into sections. Crack in an egg and mix well with a spoonful of starch.
2. Heat the oil in the pot, the temperature of the oil is 50% hot, don't fry it for too long, if it is too long, the moisture in it will be gone, and it will be too hard to eat, and it can be fried until the appearance is set. Remove the oil after about a minute.
3. Stir-fry the green onion, ginger and garlic in the pot until fragrant, fry a spoonful of bean paste to make red oil, add tomatoes, a spoonful of tomato sauce (no ketchup can be left out), and fry the juice.
Then add the green and red peppers and fungus, and stir-fry
4. Add half a bowl of water, add an appropriate amount of light soy sauce, oyster sauce, a little salt, chicken essence, sugar to taste, and a little dark soy sauce to taste.
Add the yuba, stir-fry a few more times, then pour in a little water starch, and continue to stir-fry out of the pan.
