Sweet and sour potatoes
[Preparation of raw materials]: 3 potatoes (weight not less than 250g), 8g of cooked white sesame seeds, 8g of sugar, 2 spoons of balsamic vinegar, 1 spoonful of light soy sauce, 1 gram of salt and chicken essence, 1 spoonful of cooking wine.
Step 1: First peel the potatoes, cut them into cubes with a hob, then put them in a 400ml bowl of clean water, wash and filter out the starch properly, then remove them and dry the bowl.
Step 2: In order to make the operation process more convenient, we can prepare a small bowl, add the prepared balsamic vinegar, light soy sauce, cooking wine, salt, chicken essence, sugar, 50ml of water, stir evenly, and the sweet and sour sauce is completed.
Step 3: Add an appropriate amount of oil to the pot, pour in the controlled dry potato pieces at 60% oil temperature, stir-fry until the whole body is slightly charred, pour in the prepared sweet and sour sauce, stir-fry and boil, turn to low heat and simmer for 4 minutes.
Step 4: When the soup in the pot is slightly dry, sprinkle the prepared white sesame seeds into the pot, turn to high heat and stir-fry for 30 seconds, and then you can taste it.
