Here's how I made it:
Add 15 grams of sugar, 4 grams of yeast to 1,400 grams of flour, add a small amount of 200 ml of warm water (the water temperature is about 35 degrees), stir into cotton wool, and knead into a smooth dough with moderate hardness and softness.
2. Put it in a warm place to proof, I put it in a steamer, proofing it with warm water, the water temperature can be controlled at about 35 degrees, the temperature is not too high, the yeast is easy to lose its activity.
3. Add oil to the pot, pour the green onion and stir-fry until fragrant, add an appropriate amount of soybean paste, light soy sauce, dark soy sauce, and stir-fry evenly.
4. Add a large bowl of water and bring it to a boil. Soybean paste is more salty, so you don't need to add salt.
5. Pour the boiling green onion water into the washed vermicelli and soak it.
6. Soak the vermicelli to absorb the water completely.
7. Use kitchen scissors to chop the vermicelli.
8. Add salt and oil to the boiling water, put in the beans and blanch the water, and blanch until the color turns obvious green.
9. Pass it through cold water and chop it finely.
10. Pour the beans into the vermicelli, add an appropriate amount of 13 spices, and mix well with chicken essence.
11. The volume of the dough after waking up is significantly expanded.
12. Remove the dough and knead to exhaust.
13. Knead each piece of small dough evenly and roll it into a thin round skin with a thick middle on all sides.
14. Add the filling and wrap it to your liking.
15. Brush the pan with a layer of oil, put the buns, cover and let rise for 10 minutes.
After 16 and 10 minutes, fry on low heat until the bottom is slightly browned.
17. Add starch water and submerge 1/3 of the buns.
18. Cover and simmer over medium-low heat to dry the water.
19. After the water is dry, sprinkle a layer of cooked sesame seeds and chopped green onions and start eating.
