Ingredients: 1 large oyster mushroom, 2 eggs, half a red pepper, 1 green pepper, 2 cloves of garlic, appropriate amount of salt, 1 tablespoon of Yipin fresh soy sauce, 1 tablespoon of oyster sauce, a little pepper, a little sugar, an appropriate amount of water starch

1. When we buy oyster mushrooms, it is best to choose the whole one, and the short stem of the oyster mushroom is more tender, and the edge of the oyster mushroom is very neat, like a small umbrella buckled down for the best choice 

2. Then rinse the whole oyster mushroom with running water and tear it into small flowers, wash it with water several times, remove and drain the water for later use 

3. Add an appropriate amount of water to the pot, put in 1 teaspoon of salt after the water in the pot boils, then blanch the oyster mushrooms for about 30 seconds, and squeeze out the water for later use 

4, then to deal with other ingredients, the pepper is washed, the seeds are removed and the tendons are cut into wide strips, the red pepper here is to match the color, there is no can also be left out, if you like to eat spicy, you can prepare millet pepper; Peel the garlic and cut into slices; Beat the eggs, add a pinch of salt and stir well 

5. Add an appropriate amount of corn oil to another pot, pour in the egg liquid after the oil temperature rises, do not stir it first, wait for the bottom of the egg liquid to be set, and then use chopsticks to gently dial the solidified part aside, and the part that has not yet solidified will naturally flow down, so repeated operation several times, the egg liquid will be fried into large pieces, and then put it out for later use 

6. Leave a little base oil in the pot, and then add garlic slices and stir-fry over low heat to bring out the fragrance 

7. Then add the chili pepper and stir-fry until it breaks 

8. Then put in the oyster mushrooms that have been squeezed out of the water, turn to high heat and fry quickly, and fry the blanched water to dry, so that the oyster mushrooms will be more flavorful 

9, then add a fresh soy sauce, oyster sauce, pepper and an appropriate amount of salt to taste (note that salt has been added to the eggs, and the salt here should be added less to avoid the dishes being too salty), and then add a little sugar to enhance the freshness. 

10. Stir-fry the seasonings and dishes evenly, and then add the scrambled eggs in advance and stir-fry evenly 

11. Finally, pour in an appropriate amount of water starch, the amount of water starch does not need to be too much, a thin layer is fine, which can make the taste of the dish more prominent
