3. When choosing lotus root, you should smell whether there is any peculiar smell, a good lotus root exudes a faint earthy smell, and it smells slightly sour, it is industrially processed, so don't choose such a lotus.
4. Lotus root is generally divided into crisp lotus root and powder lotus, the color of crisp lotus root is generally slightly white, the surface is smooth, the color of powder root is light yellow-brown, the surface is slightly with small spots, rough and not smooth.
5. Crispy lotus root is generally suitable for cold dressing and stir-frying, and there are many shredded lotus roots, which are suitable for soup and stewing. 2. Refrigeration and preservation
