Today's dinner made steamed buns like this, and with stir-fried vegetables and egg soup, it was very popular when it was served!
1. Put 300 grams of flour, 3 grams of yeast and 3 grams of sugar (to promote fermentation) in a basin and stir well, mix with warm water:
Stir with chopsticks while adding water, stir until flocculent, mix into a dough with moderate firmness, cover and let rise until twice the size.
[You can put the basin in warm water at about 40°C, cover it with a lid and ferment, and it will be ready quickly]
2. Take out the proofed dough and knead the dough on the cutting board to exhaust the dough, and divide it into two groups of dough agents of different sizes.
The larger dough is kneaded and rolled out, and the smaller dough is kneaded evenly and rounded.
3. Brush the oil on the rolled dough and put the round small dough into it.
Fold it with the technique of tightening the tiger's mouth, do not seal it, and put it upside down on the panel.
4. After all the products are done in turn, cover with plastic wrap and let rise for 10 minutes.
5. Cook on cold water, steam the pot for 15 minutes, turn off the heat, simmer for 5 minutes, and remove from the pot.
Take out the core of the dough inside, and serve the vegetables in the dough nest for a while.
1. Wash the chicken breast, tear off the fascia on it, cut it into small cubes and put it in a bowl.
Add a little light soy sauce, dark soy sauce (colored), cooking wine, white pepper and starch, mix well and marinate for a while.
2. Wash the garlic moss, cut it into long sections and blanch it (put a little salt in the pot and blanch the garlic moss for one minute after the water boils).
Blanch the garlic moss and cut it into small cubes for later use.
3. Remove from the pot and add oil, add green onions, chopped ginger and dried chili rings and stir-fry until fragrant, then add the marinated chicken breast and stir-fry.
Add a pinch of salt, sugar, dark soy sauce (for coloring), then add the processed garlic and stir-fry evenly.
[If you like a soft texture, you can also add a little water and simmer for a while]
Pour in a little sesame oil before cooking, stir evenly.
Finally, put the fried vegetables into the steamed bun nest, and then serve it with egg soup, and you can eat!
