Today I made Jajangmyeon, which everyone loves.
The key to jajangmyeon is the flavor of the sauce. Typically, two sauces are used: sweet noodle sauce and soybean paste. The two sauces can complement each other's strengths, and the mixed flavor is more fragrant!
Since you make it at home, you can also choose the dishes based on the ingredients you have at hand and your preferences. Let's share my approach together:
Ingredients Required:
Pork, shiitake mushrooms, carrots, cucumbers, coriander, garlic, green onions, ginger, sweet noodle sauce, soybean paste, cooking wine, soy sauce, sugar, chicken essence, sesame oil, light soy sauce, vinegar
1. Cut the pork into cubes (or directly with pork filling), chopped green onions, and minced ginger.
Wash the cucumbers and carrots and cut them into thin strips. I feel that it is best to marinate the shredded carrots with a little salt first, and the taste will be better.
Add vinegar and light soy sauce to the mashed garlic to taste.
2. Remove from the pot and add oil (the oil should be slightly more than usual when stir-frying), add chopped green onion and minced ginger and stir-fry until fragrant.
Add diced pork and cooking wine and stir-fry until the pork turns white.
Add the sweet noodle sauce and soybean paste (1:1)
Stir-fry in soy sauce until fragrant.
Then add the diced shiitake mushrooms and stir-fry evenly.
Pour in half a bowl of hot water and bring to a boil.
Stir constantly and stir-fry until the soup is thick; Then add a little sugar, chicken essence and sesame oil and mix well.
Remove from the pan
3. Put a bowl of water, a little light soy sauce and a little salt in the pot where the meat sauce was fried just now, stir well, bring to a boil over high heat, put in the chopped coriander segments, and pour it into a bowl (pour the soup)
4. Put the noodles in a bowl after cooking, and if you like to eat dry noodles according to your personal preference, you can directly put in the prepared dishes, fried sauce, and garlic paste and mix well, and you can eat.
If you like the taste of soup, you can also pour in the sauce you just burned, and then add fried sauce, vegetable code, and garlic paste and mix well.
Tips:
It will be even more delicious if you have chicken broth poured in at home.
