Today, I used pumpkin to make delicious and nutritious moon buns for my family, sandwiched with homemade shredded pork in Beijing sauce, which is delicious and satisfying.
Here's how I made it:
1. Peel and slice the pumpkin, steam it in a pot, mash it into a puree, and put it until warm for later use.
2,400 grams of flour, 15 grams of sugar, 5 grams of yeast, mix well. Add 220g of pumpkin puree, mix well and knead into a smooth dough with moderate firmness and softness. (The water absorption rate of each flour is different, pumpkin puree is added in small quantities and many times)
3. Put it in a warm place to rise. If it's cold in winter, we can wake up through warm water, and the water temperature is around 35 degrees.
4. Add some green onion and ginger water to the shredded meat, grasp and mix until sticky, then add an appropriate amount of light soy sauce, dark soy sauce, pepper, salt, add an egg white, 2 teaspoons of starch, grasp and mix evenly, add a little cooking oil, mix well to prevent sticking.
5. The volume of the dough is significantly expanded, which means that it is ready.
6. Knead and exhaust and roll into large dough sheets. It's about 0.3 cm thick.
7. With the help of a small bowl, press out the round cake.
8. Spread a layer of cooking oil on one side of the cake. Cooking oil is applied to prevent sticking.
9. Fold it in half.
10. Press out the pattern with a comb that has never been combed.
11. Use a scraper to push it in according to the lines.
12. Put it in the steamer and wake up again for 15 minutes, turn on high heat and steam for 20 minutes, turn off the heat and simmer for another 3 minutes.
13. Add oil to the pot, pour shredded meat and stir-fry. It doesn't take too long to stir-fry, and the meat is just cooked.
14. Set aside.
15. Add a little oil to the pot, add 2 tablespoons of sweet noodle sauce, stir-fry evenly. Add a little green onion and ginger water and stir-fry evenly. Pour in shredded meat, add a little dark soy sauce, stir-fry and color.
At home on weekends, I do this for my family when I have time, it looks delicious, nutritious, and the whole family is so happy to eat.
