2. Peel and wash the yam, crush the yam with a knife, and then chop it a little more delicately to make it viscous.
3. Prepare two eggs and stir them well.
4. Add an appropriate amount of oil to the pot, pour in the carrots and shiitake mushrooms and stir-fry until fragrant.
5. Add an appropriate amount of water, then pour in the yam puree and bring to a boil over high heat.
6. After the water boils, boil for a minute, add an appropriate amount of salt, and sprinkle the egg mixture evenly. Wait until the egg mixture has solidified a little and gently push it apart.
7. Add the chopped vegetables, blanch for about ten seconds, drop a few drops of sesame oil, and turn evenly to get out of the pot.
