【Stir-fried bacon with garlic】
Prepare a handful of garlic sprouts, a piece of bacon, garlic, ginger, dried chilies, salt, light soy sauce and sugar.
1. Buy a handful of fresh garlic sprouts, rinse them with water, and cut them into 5 cm long sections. Slice the garlic, slice the ginger, and cut the dried chili pepper into pieces.
2. Brush the bacon with water, put it in the pot, add an appropriate amount of water, boil for 20 minutes, remove it when it can be pierced with chopsticks, rinse it and cut it into thin slices.
3. Re-add an appropriate amount of water to the pot, bring to a boil over high heat, add a spoonful of salt and half a spoon of cooking oil, stir well, pour in the chopped garlic sprouts, boil for 1 minute, remove them, and cool with cold water.
4. Start the pot again, no need to put oil, pour in the bacon slices, stir-fry for a while on low heat, the lard in the bacon will come out, and the bacon is fragrant all over the house, but after the bacon slices become transparent, add garlic slices and ginger slices and fry until fragrant.
5. Pour in the blanched garlic sprouts, stir-fry quickly over high heat for 1 minute, let the garlic sprouts absorb the fragrance and oil of the bacon, add an appropriate amount of light soy sauce and sugar, pour in an appropriate amount of water, and turn off the heat after stir-frying evenly.
6. The fried garlic sprouts are crispy, fragrant, and very flavorful, and they complement each other with bacon, which is a very delicious meal.
There are 3 points to pay attention to when boiling garlic sprouts:
1. Boiling in boiling water is not boiling in cold water.
2. Add some salt and cooking oil.
3. Boil for 1~2 minutes, then remove and cool with cold water.
Doing so will make the garlic sprouts softer, easier to absorb the flavor, and keep them tender and crispy. Garlic sprouts and bacon are a classic pairing, bacon originally contains more salt, so when seasoning, you should put less salt or no salt, if it is salty, add some sugar, can neutralize the salty taste, but also improve the freshness.
