In order to balance the taste and nutrition, this whole wheat bread made today uses half whole wheat flour, which belongs to semi-whole wheat bread. Pursuing the concept of healthy eating, low sugar and less oil, its taste is not as soft, delicate and sweet as bread made of pure gluten flour, but has toughness, rough and slightly sweet, and takes a rough route, between pure high-gluten flour and pure whole wheat flour. The surface is decorated with sesame seeds, which also looks beautiful, and the aroma of sesame seeds mixed with wheat has masked the slightly rough taste.
Whole wheat sesame meal pack
180 grams of gluten flour, 170 grams of whole wheat bread flour, 40 grams of caster sugar, 3 grams of salt, 3 grams of high-sugar resistant yeast, 2 eggs, 160 grams of milk, 20 grams of corn oil
Appropriate amount of egg white or sugar water, appropriate amount of white sesame seeds (cooked).
Here's how
The amount of milk is adjusted according to the size of the egg, milk + egg = 260 grams, add yeast, sugar, stir until melted, add high-gluten flour, whole wheat flour, stir into a flocculent, add salt and corn oil, knead for a while, and form a smooth dough with moderate softness and hardness, which can pull out the state of the film. It would be even better if there was a bread maker or a chef to do the work for you.
Place in a warm place and ferment until twice the size. Fingers stick to dry flour and press it, do not collapse or retract, and pull apart with fine honeycomb tissue.
The fermented dough is vented, my method is: use a rolling pin to roll it out and fold it again, roll it out and fold it again, repeat it several times, and the exhaust effect is faster and better than kneading it by hand. Divide into 16 equal portions, knead the round and cover with plastic wrap for later use.
Prepare egg whites or white sugar water (the ratio of sugar to water is one to one), which has been proven to be more effective than egg whites dipped in sesame seeds.
Brush the dough with egg whites to stick the sesame seeds, and the finished sesame seeds are evenly distributed.
Make all of them in turn, put them in a baking sheet, cover them with plastic wrap, and put them in a warm place to ferment twice as much.
This is what fermentation looks like.
Put it in the middle of the preheated oven, bake at 160 degrees for 25 minutes, bake until the surface is golden brown, and cover with tin foil when you are satisfied with the color halfway.
When the time is up, immediately take out of the oven and pour it out, divide it until it is baked on a baking net, cool to lukewarm, bag and seal for storage.
If you like it, do it, the health of our family is our greatest pursuit.
