Materials
Pork ribs 3 pounds (whatever you want)
Light soy sauce 3 teaspoons
Sliced ginger 5 slices
2 bay leaves
Cinnamon bark 1 piece
Angelica dahurica 2 tablets
2 cloves of garlic
4 pieces of rock sugar
Star anise: 3 pcs
Cooking wine 10ml
3 tablespoons of salt
3 scoops dark soy sauce
Half a spoon of soy sauce (stir-fry spoon)
Preparation of braised pork ribs
1. Wash and blanch the pork ribs. Add cooking wine, ginger slices, green onions, and an appropriate amount of water.
2. Remove the ribs after blanching. (Blanch to remove blood foam)
3. Prepare green onions, ginger, garlic, rock sugar, star anise, bay leaves, cinnamon, and angelica.
4. Pour in an appropriate amount of oil, add green onions, ginger and garlic and stir-fry until fragrant, rock sugar. Add the pork ribs and stir-fry until the rock sugar is browned and melted.
5. After stir-frying, add soy sauce, dark soy sauce, light soy sauce and cooking wine, the ratio is 3:2:2:2
6. Add an appropriate amount of hot water to cover the ribs. Add star anise, cinnamon, angelica and bay leaves, and start to simmer. Simmer for about 45 minutes......
7. Simmer until soft, taste salty, then add an appropriate amount of salt, and continue to simmer for 15 minutes to reduce the juice and taste.
