Today, I used pumpkin to make noodles for my family, I have no appetite in the hot weather, so I have a bowl, which is fragrant and appetizing, delicious and nutritious.
Here's how I made it:
1. Peel and steam the pumpkin and mash it into a puree.
Add a spoonful of salt to 2,300g flour and mix well. Add 150g of pumpkin puree and knead into a slightly firmer dough. Cover and let rise for 30 minutes.
3. Chop some minced meat.
4. Cut some diced cowpeas.
5. Chop some diced tomatoes.
6. Once all the side dishes are ready, start pressing the noodles.
7. Boil water in a pot, add a spoonful of salt, and cook the noodles below.
8. Remove and put into cool boiled water.
9. Add oil to the pot, stir-fry the minced meat, stir-fry until it changes color, pour in the minced garlic and ginger and stir-fry until fragrant.
10. Pour in the diced cowpeas and stir-fry until broken.
11. Pour in diced tomatoes, add an appropriate amount of salt, light soy sauce, dark soy sauce, sugar, balsamic vinegar, and stir-fry to taste.
12. Add a little water and simmer for about 1 minute to make the cowpeas fully cooked.
13. Add an appropriate amount of starch water and fry until the soup is viscous.
Pour the fried minced meat cowpeas into the noodles, mix well and serve.
The method is simple, delicious and nutritious, and friends who like it can try it.
